Homemade Blueberry Muffins

So, I am still on this “learn to cook/bake from scratch kick”. 🙂 Continuing on the breakfast food thread is…. Blueberry Muffins!!

2c fresh blueberries, tossed with 1/4c flour (or thawed frozen)
2c all purpose flour
4tsp baking powder
1tsp salt
1/4c butter
1 and 1/2c sugar (white)
2 eggs
1tsp vanilla
1c milk (skim, in this case)

*Preheat oven to 375F.
*Toss together the blueberries and 1/4c flour.
*Combine the salt, baking powder, and flour together.

First, you cream the butter, and add the sugar slowly. I kind of dumped both in together and turned the mixer on stir, with no ill effects.

Add the vanilla, then 1 egg at a time, mixing well.

Add in the flour and milk slowly, mixing well. I kind of did it in fourths. 🙂

Once the batter is mixed, fold in the blueberries!

Spoon or scoop the batter into the pan/cups, and bake for 25 minutes, or until a toothpick in the middle comes out clean!

These were totally delicious! Moist and fluffy and the blueberries rocked!

Project Runway Season 8

Alright, so Mom got me into watching Project Runway last season… so here I am, watching it again.

Every season, the designers get a little more venomous, it seems.

But, really, this year… it’s the judges. They’ve gone from critical to outright bitchy, snarky… not to mention BLIND.

The main judge I have a problem with is Michael Kors. He’s rude, bitchy (in a bad way), snide, and a walking hypocrite. He’s judging women’s clothing… but he himself cannot make clothes to fit a woman well!

I mean, has he SEEN his clothing ON actual women? Non-models, I mean. Real people, the people who, supposedly, buy his clothing.

Probably not. His clothing is unflattering. It’s downright ugly. The lines are bad. The colors are awful. The constriction is terrible.

Project Runway, I think it’s time to open your eyes and get RID of the deadweight.

I don’t make clothes, but I’m good at art. I know lines. I know what’s pretty, what looks good.

Michael Kors… does not.

Not my own creation, but VERY delicious!! ❤

Back at the leather shop while taking classes, one of the lovely ladies there, Lois, brought in these scrumptious treats.

Trying to find something to take to my (then) new job as a “thank you for hiring me” (I no longer work there…no fault of the cookies’!), I remembered her cookies and looked for a recipe.

I found one online…BUT I changed the baking instructions… to make bloody sense and be useful.

Gooey Butter Cookies
Makes about 24

8 ounces cream cheese (1 package)
1/2 cup butter, softened
1 egg
1/4 teaspoon vanilla extract
1 18.5-ounce package yellow cake mix
1/4 cup powdered sugar

Preheat oven to 350 F.
In a medium bowl, cream together the cream cheese and butter.

Stir in the egg and vanilla. Add cake mix, and stir until well blended. It’s going to turn into a sticky mess – very thick!

Roll or spoon into loose balls about 1 inch around, and then roll the balls in the powdered sugar.
Place 1 inch apart onto an ungreased cookie sheet – I found it easy to press down on the balls alittle, they baked alot easier.

Bake for 10 to 13 minutes – I found 13 worked for my oven. I let the cookies cool on the tray while the oven got hot again (opening the door makes it loose heat!) When they are done, they will be yellow, with little cracks and valleys and soft to the touch. Don’t expect alot of browning. Do your first bake at 13 minutes – I’d rather overbake than underbake.

Once they’re out of the oven, dust with MORE powdered sugar!!! And enjoy, preferably with a nice cold glass of milk!!

I Wonder…

If it is possible to make a decent-tasting marinara sauce with tomato soup and the spice cupboard?

I’ve got pasta and chicken breasts and some garlic cloves… but no tomato stuff, except for 2 cans of tomato soup.

I must ponder… will it be a catastrophe if I do this…?
