Family Recipe – Lefsa

I’m Norwegian!!! šŸ˜€

Typed out EXACTLY as my grandmother wrote it…. so please excuse any non-sensical instructions or spelling errors. Under her version I’ve retyped it.

LEFSA

2 cups mashed potatoes
2 tbs margarine

Use flour of own disgression until you can pat out and roll it as then do you can

Electric pan works great at about all the way. Use butter on iron skillet.

What I think she means:

LEFSA (Potato Pancakes, VERY tasty!!!!)

Mix the mashed potatoes and margarine together. Use flour on your work surface so that you can easily pat out the pancakes, or roll them if you prefer. I believe they are to be thicker than crepes and thinner than traditional pancakes.

Then cook them thouroughly – if not using a nonstick pan, be sure to use butter (tasty flavor!) to help keep them from sticking. If memory serves, they should be golden brown and delicious.
