“Orange”-Ginger Honeyed Chicken

Sometimes it’s nice of having a cooking skill of 450 – loot the fridge and… oh, gamer jokes lost on ya? Well, then I will get right down to business!!

Ingredients:
Chicken Breasts 2-4
Sunny D (original)
Orange Blossom Honey
Ground Ginger
Salt (table salt)
Pepper
Lemon Pepper
Large non-stick pan with a lid

Put a large non-stick pan over medium heat (5 on my electric stove). Let it get a little warm while you grab the chicken and stuff.

Pour in enough SunnyD to cover the bottom of the pan. Add one large spoonful of orange blossom honey – mine was semi-sugared, so this was really easy.  Add in 4 grinds of black pepper, 3-4 light shakes of saly, and6-7 shakes of ground ginger – the ginger I did by shaking my hand back and forth at the elbow, getting ginger on all the sunnyD.

Next, mix it all together. You can use a coated whisk (it IS a non-stick pan!), but I just used a plastic spatula, mushed the honey down, and stirred a little.  Once it just starts to bubble, add in the chicken breasts.

I cooked the breasts about halfway, turning occasionally, then I turned up the heat to medium-high (7-8 on my electric stove). Cover and cook 3 minutes. Uncover, turn, add another shaking of ginger across the pan, and lightly tap Lemon Pepper on the chicken as well. Cover and cook until done, turning sometimes. Both sides had a little brown on them.

I left the heat on as I served the chicken – the sunnyD mixed with honey was thickening on it’s own and made a nice sauce!!

I paired this with lemon-pepper green beans and a box of stuffing. Really tasty, the chicken was AMAZING, if I do say so myself!!!
